How delicious do these look?.... and they really are easy to make... oh and yes, they are delicious.
All you need -
2 handfuls of mixed nuts - activated in warm water for an hour or so...
1 handful of raisins
2 tablespoons of coconut oil
1 tablespoon of mixed spice
1/2 teaspoon of turmeric
Organic cranberry powder
(I get all my ingredients from Grape Tree whole foods. I always buy in bulk as it works out cheaper in the long run, plus I have a thing about kilner jars and how great these things look displayed)
How to make
I used a food processor, but you could bash the nuts in a bag with a rolling pin. Just to break them up. Mix in the raisins and melt the coconut oil in a mug in a bowl of boiling water and pour in.
Keep mixing.
Place in the fridge to resolidify the coconut oil, about 30 mins or longer if you have time.
Get a fancy mould, or use a tea cup for the base, you can use rubber ice cube trays. Pop back in the fridge to set.
With the balls, I use scales and weigh out 20g, it's a good mouthful. Or you could go smaller. Roll in your palms, the warmth of your hands will melt the coconut oil and in another bowl put the cranberry powder to coat the balls. Just place them in and in a circular action move the bowl and you won't lose the shape you've made.
Then CHILLLLL.
